Amuse Bouche

 

Appetizer

Artisan lettuce, pickled onions, duck bacon, Trappist cheese, candied pecans, Camelina oil vinaigrette

Roasted Roots salad, hemp seed aioli, served on top of spinach and Manitoba quinoa

Smoked chicken consommé, green peas, carrots, roasted potatoes, finished with Simon and Garfunkel oil

Potato leek soup, Trappist cheese fondue, garlic chips, chives

Pasta course

Gnocchi and Mushrooms
Long gnocchi, served with Manitoba forest mushrooms sauce, fried new Bothell cheese curds, green peas and shoots

Black Pasta Puttanesca
Natures farm black fettuccine gently tossed in a low and slow tomato sauce flavoured with garlic anchovy capers olives and parsley. Finished with cold pressed camelina oil

Pickerel Rigatoni
Lake Winnipeg pickerel, fire roasted red peppers, brussels sprouts, finished with garden fresh pesto

Mains

Beef Wellington $65
Beef tenderloin, crushed with maple Dijon, topped with mushroom duxelles and covered in house made puff pastry, served with mushroom jus

Chicken Cordon Rouge $55
Manitoba pastured chicken breast stuffed with prosciutto, Trappist cheese and sage, served on top of sweet potato mash, mornay sauce

Water Song Farms Smoked Steelhead Trout $58
Served with warm spiced beet puree, braised leek and wild rice garnished with pea shoots

Dessert

Maple spiked crème brûlée

Vanilla tart, poached pears, lemon sauce, local buckwheat honey

Chocolate and salted caramel cake sprinkled with spiced almonds
