Spring Cocktail

Well, it has been a slower start to spring this year with temperatures that have been a little shy over the month of April. But, the summer sun is definitely on it’s way – we can feel it! We’re ready to kickstart the summer with a refreshing spring cocktail that you’ll want to make time and time again over this summer.

The Strawberry Brook cocktail can be found on our drink menu in the restaurant all summer and features one of our local suppliers for the restaurant – Abiding Citizen. Abiding Citizen creates artisan shrubs, syrups and bitters for use in cocktails and beverages in a variety of unique, interesting flavours. We used their strawberry shrub to amp up the flavour in this cocktail.

Now what is a shrub, you ask? And what is the difference between a shrub, a syrup and bitters? At first I thought a shrub literally meant the concentrate came from a shrub (like a bush). This is not true. A shrub is a simple, sweet and tart concentrate that adds complexity to a drink, while a syrup adds sweetness to a drink and bitters add and enhance flavours without sweetness. Now you know!

2 oz Abiding Citizen strawberry shrub

1 oz Long Island Iced Tea mix

.5 oz tequila

3 oz lemonade

2 oz 7-up



1. In a glass, rimmed with white sugar, combine all ingredients over ice.
