With only 6 ingredients, you can create this delicious, vegan, and gluten-free burger. Pair it with a salad and some sugar-free lemonade for a nutritious meal!
1 cup baked and mashed sweet potato
1 cup canned black beans
1 ½ cups cooked quinoa
½ cup bread crumb (choose the gluten-free ones)
½ cup finely diced green onion
2 tsp ground cumin
2 tsp smoked paprika
1/2 tsp each salt and pepper
1/4 tsp chili powder (sub cayenne for added spice)
Mix all ingredients together in a bowl. If mixture is a bit wet, add more bread crumbs. Taste and adjust seasoning as desired. Form mixture into patties. In a pan, cook the burgers on medium heat until brown and slightly crispy on both sides. Serve with your favourite toppings!
